Maftoul with grilled kofte

Maftoul is a delicious large grain cous cous traditionally made in Palestine for special occasions. It is being hand-rolled and sun dried.

Ingredients (serves 2)
For the kefta

  • 250gr minced beef
  • 2 shallots, very finely chopped
  • 1 garlic cloves, crushed
  • 1 tsp ground ginger
  • 1 tsp chilli powder
  • 1 tsp paprika
  • 25gr bread crumbs
  • small handful coriander leaves, finely chopped
  • small handful flatleaf parsley, finely chopped
  • 1 free-range egg yolk (to bind)
  • salt and freshly ground black pepper

For the maftoul

  • 100 gr maftoul
  • 200ml vegetable stock
  • zest and juice of half lemon
  • 1 tbs olive oil
  • a small can of chickpeas
  • small handful flatleaf parsley, finely chopped
  • small handful mint, finely chopped
  • half tomato, sliced and diced

How to:

  1. For the kefta, place all the ingredients into a large bowl. Season with salt and freshly ground black pepper and mix well.
  2. Knead with your hands to form a smooth paste. Shape them and place under the grill.
  3. Tip the maftoul into a large bowl, pour over the stock. Cover, and leave for 10 mins, until fluffy and all the stock has been absorbed. Meanwhile, slice and dice the tomato and the herbs. Add these and the chickpeas to the maftoul. Mix the lemon zest with the juice and the olive oil and pour over.  Mix well and serve with the grilled kefta on top.
